If one believes in something like reincarnation, I must say I have been English for a while. Also Italian. But I feel very familiar with English food. The first day I ate in a pub I was already 30. And I found it absurdly tasty. But by then, I was not slightly interested in cooking. Now that I enjoy spending some time in the kitchen, I also dare to experiment some English recipes.
This one is part from Gordon and part from me :) I have modified his recipe slightly due to one reason: when I read the recipe I had no glasses on so I understood "white wine" instead of "read wine". Moron.
Anyway, here we go.
Warm-up the oven very low:150 degrees
Mix three big spoons of flour, a bit of salt and peper:
Now grab a good piece of stew meat and cut in pieces. Spread a bit of the spiced flour on it:
Warm-up a stew pan with some olive oil and fry the pieces of meat. On small portions:
While frying, cut two onions and press one garlic tooth:
After having fried all the meat and put it apart, put the onions and garlic into the same pan, add the bacon and fry it for 5 to 8 minutes until brown:
When golden, add the rest of the flour, mix well, add 600ml of wine (I have used white for a mistake but you can use red ;).
Leave it to cook for a while and in the meantime work the vegetables:
Add them to the pan:
Add the meat with the juices:
Add 600ml of bouillon and wait until it boils again. When it does, put into the oven:
After 1 hour, get it out, mix, and put it into the oven again.
In the meantime, make the scones.
250g of baking flour:
Salt and 50g of butter on small pieces:
100g of Cheddar cheese (save some to spread over the pan later on):
And 150ml of milk:
Put everything into the mixer bowl:
And set it in the kitchen machine:
Until it gets more ore less like this:
After that work the dough with your hands, adding flour if needed. Make a ball and set in plastic into the fridge until the meat is not yet ready:
After approximately 2 1/2 hours in the oven, get the pan out. Get the scone dough from the fridge, make balls and then circles, covering the top of the pan with the meat.
Sprinkle it with milk:
Spread the cheddar cheese over it:
And put it back into the oven for more 20 minutes or until it gets golden. A luxury!
After you eat and lick the board, you can keep reading.
About the images: I have sinned again. Somewhere in the process I have changed the opening from 4 to 1.4. I don't remember when/where/how. But I was so relaxed cooking that I completely forgot to check it out. So, the pictures are not really sharp. Next time I will cut my own fingers if it happens again!
