#12 [Sofrito]

To cook is very nice. I try to do my best every day I need to cook... and there are three ingredients I always have at home: carrots, onions and celery.

Sometimes I also add garlic...

Anyway, when I came to live in frogland, my experience with cooking was zero, nothing, nada! Here I started by learning that you make your own food (yes sir!) and after you absorb this first painful lesson, comes the second one: all those ready-spice-mixes full of chemicals are not quite tasty and also not quite healthy.

After learning that, there is just one way to be happy: is to start enjoying the cooking sport.

But learn how to cook is something that doesn't come for free, specially if you come from a house where cooking also did not have all that importance. And it took me time to learn the essentials.

One tip I have learned is to make the soffritto (or sofrito). I make it very simple but I make it always as the base for a lot of recipes: sauces, soups, meet, risotto and much more.

But one thing is very important to make a really nice soffritto: you need to fry the vegetables very slowly, on a very low fire and keep stirring... hummm... after some time they start to liberate the juices and caramelize... and it gets really really nice humm....

But don't be lazy and cut the vegetables for the entire week: it doesn't taste the same!

About the pictures: I knew that I loved to take pictures of flowers but food is also coming as one of the favorites. The first picture is a strobe one, with a white umbrella to diffuse the light. Always using a tripod and a remote control to avoid camera shake!
